Rebel Gesha is a meticulously crafted coffee sourced from the El Vergel Estate, a high-elevation farm renowned for its commitment to quality and sustainable practices. The Gesha variety thrives in nutrient-rich volcanic soil and cool mountain microclimates, which allow the cherries to mature slowly and develop extraordinary flavor complexity. After careful handpicking of only the ripest cherries, the beans undergo a precise Semi-Washed Anaerobic process with an extended fermentation period, enhancing the coffee’s floral aromatics and bright, sparkling acidity. Sun-dried on raised beds, the beans are turned frequently to ensure even drying and to preserve their delicate characteristics.
In the cup, Rebel Gesha offers a silky, tea-like body with layered notes of jasmine, orange blossom, and bergamot, balanced by tropical fruit sweetness and a honeyed finish. The combination of mindful farming, high-altitude terroir, and meticulous processing results in a vibrant, elegant coffee that shines in pour-over or other slow-brew methods.
